Chicken Cordon Bleu Casserole

Ingredients:

  • 3 cups cooked chicken, shredded (rotisserie works great!)
  • 6 oz ham, diced
  • 1 ½ cups shredded Swiss cheese (or mozzarella)
  • 4 oz cream cheese, softened
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt & pepper to taste

Topping:

  • ½ cup crushed pork rinds (or almond flour for crunch)
  • ¼ cup grated Parmesan cheese
  • 1 tbsp melted butter

Instructions:

1️⃣ Preheat Oven: Set to 375°F (190°C) and grease a casserole dish.
2️⃣ Layer the Base: Spread shredded chicken in the bottom of the dish. Top with diced ham and 1 cup of Swiss cheese.
3️⃣ Make the Sauce: In a bowl, mix cream cheese, heavy cream, sour cream, Dijon mustard, and seasonings until smooth.
4️⃣ Assemble: Pour the sauce over the chicken and ham, spreading evenly. Sprinkle the remaining ½ cup of Swiss cheese on top.
5️⃣ Crunchy Topping: Mix crushed pork rinds, Parmesan, and melted butter, then sprinkle over the casserole.
