Chicken Caesar Pasta Salad

📝 Ingredients:

For the Salad:

  • 2 cups cooked chicken breast (grilled or shredded)
  • 2 cups cooked pasta (penne, rotini, or bowtie work well)
  • 2 cups romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/2 cup croutons
  • 1/4 cup parmesan cheese, shaved or grated

For the Caesar Dressing (or use store-bought):

  • 1/2 cup mayonnaise
  • 2 tbsp grated parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 garlic clove, minced
  • Salt and black pepper to taste
  • 1–2 tbsp water or milk (to thin the dressing if needed)

🥣 Instructions:

  1. Cook pasta according to package directions. Drain, rinse with cold water, and let it cool.
  2. In a large bowl, combine the cooked pasta, chopped chicken, lettuce, tomatoes, red onion, and croutons.
  3. Make the dressing by whisking all the Caesar dressing ingredients together in a small bowl until smooth.
  4. Pour dressing over the salad mixture and toss gently to coat everything evenly.
  5. Top with parmesan cheese and a few extra croutons for crunch.
  6. Serve immediately or chill in the fridge for 20–30 minutes for a cold pasta salad.
