Chicken Caesar Pasta Salad

📝 Ingredients:
For the Salad:
- 2 cups cooked chicken breast (grilled or shredded)
- 2 cups cooked pasta (penne, rotini, or bowtie work well)
- 2 cups romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved (optional)
- 1/4 cup red onion, thinly sliced (optional)
- 1/2 cup croutons
- 1/4 cup parmesan cheese, shaved or grated
For the Caesar Dressing (or use store-bought):
- 1/2 cup mayonnaise
- 2 tbsp grated parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- Salt and black pepper to taste
- 1–2 tbsp water or milk (to thin the dressing if needed)
🥣 Instructions:
- Cook pasta according to package directions. Drain, rinse with cold water, and let it cool.
- In a large bowl, combine the cooked pasta, chopped chicken, lettuce, tomatoes, red onion, and croutons.
- Make the dressing by whisking all the Caesar dressing ingredients together in a small bowl until smooth.
- Pour dressing over the salad mixture and toss gently to coat everything evenly.
- Top with parmesan cheese and a few extra croutons for crunch.
- Serve immediately or chill in the fridge for 20–30 minutes for a cold pasta salad.
