Ingredients:

For the Chicken Breast:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For the Potatoes:

  • 2 large russet potatoes, cut into small cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. In a mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, dried thyme, salt, and pepper for the chicken marinade. Coat the chicken breasts evenly with this mixture.
  3. In another bowl, toss the potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Make sure the potatoes are well-coated with the seasoning.
  4. Place the seasoned chicken breasts in the air fryer basket, leaving some space between them to allow for proper air circulation. If your air fryer is small, you may need to cook the chicken in batches.
  5. Place the seasoned potato cubes in a separate air fryer basket or tray.
  6. Cook the chicken at 375°F (190°C) for 20-25 minutes, flipping the chicken halfway through the cooking time. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the juices run clear.
  7. While the chicken is cooking, shake the potato basket or stir the potatoes occasionally to ensure they cook evenly. Cook the potatoes for about 20-25 minutes or until they are golden and crispy on the outside and tender on the inside.
  8. Once both the chicken and potatoes are done, serve them together on a plate. You can garnish with fresh herbs or a squeeze of lemon juice for added flavor.
