Chicken Bacon Ranch Roll-Ups

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 4 large flour tortillas
  • 1/2 cup green onions, chopped (optional)
  • 1/2 cup diced tomatoes (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Filling:
    • In a large bowl, combine the cooked chicken, crumbled bacon, shredded cheddar cheese, and ranch dressing. Mix well until everything is evenly coated. Add salt and pepper to taste.
    • If using, stir in the green onions and diced tomatoes.
  2. Assemble the Roll-Ups:
    • Lay a tortilla flat on a clean surface.
    • Spread a quarter of the chicken mixture evenly over the tortilla, leaving a small border around the edges.
    • Roll the tortilla up tightly, starting from one end and rolling to the other.
  3. Chill and Slice:
    • Place the rolled-up tortilla seam-side down on a plate.
    • Repeat the process with the remaining tortillas and chicken mixture.
    • Chill the roll-ups in the refrigerator for about 30 minutes to firm up (optional but helps with slicing).
  4. Serve:
    • Slice each roll-up into 1-inch pieces.
    • Arrange the pieces on a serving platter.

Tips:

  • These roll-ups can be made a few hours ahead of time and stored in the refrigerator until ready to serve.
  • For a healthier option, use whole wheat tortillas and turkey bacon.
  • Feel free to add other favorite ingredients such as avocado, bell peppers, or cucumbers.
