Chicken Bacon Ranch Casserole
Ingredients:
- 2 cups cooked chicken breast, diced or shredded
- 6 slices cooked turkey bacon, chopped
- 1 cup plain Greek yogurt (or light sour cream for a creamier version)
- 1/2 cup low-fat shredded cheddar cheese
- 1/2 cup reduced-fat ranch dressing (look for a lower calorie or homemade version)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups cooked whole wheat pasta or cauliflower florets for a low-carb option
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease a casserole dish with cooking spray.
- In a large mixing bowl, combine the diced/shredded chicken, chopped bacon, Greek yogurt (or sour cream), cheddar cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Add in the cooked pasta or cauliflower florets and gently fold them into the mixture until evenly distributed.
- Transfer the mixture to the prepared casserole dish, spreading it out evenly.
- Optionally, sprinkle a little extra cheese on top for an added touch.
- Bake in the preheated oven for 20-25 minutes or until the casserole is heated through and the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
