Chicken Bacon Ranch Casserole

Ingredients:

  • 2 cups cooked chicken breast, diced or shredded
  • 6 slices cooked turkey bacon, chopped
  • 1 cup plain Greek yogurt (or light sour cream for a creamier version)
  • 1/2 cup low-fat shredded cheddar cheese
  • 1/2 cup reduced-fat ranch dressing (look for a lower calorie or homemade version)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked whole wheat pasta or cauliflower florets for a low-carb option
  • Cooking spray

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a casserole dish with cooking spray.
  2. In a large mixing bowl, combine the diced/shredded chicken, chopped bacon, Greek yogurt (or sour cream), cheddar cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Add in the cooked pasta or cauliflower florets and gently fold them into the mixture until evenly distributed.
  4. Transfer the mixture to the prepared casserole dish, spreading it out evenly.
  5. Optionally, sprinkle a little extra cheese on top for an added touch.
  6. Bake in the preheated oven for 20-25 minutes or until the casserole is heated through and the cheese is melted and bubbly.
  7. Once done, remove from the oven and let it cool for a few minutes before serving.
