Chicken Bacon Artichoke Pizza

Ingredients:

For the crust (fathead dough):

  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 egg
  • Pinch of salt

For the toppings:

  • ½ cup cooked chicken breast, shredded or chopped
  • ¼ cup cooked crispy bacon, crumbled
  • ½ cup artichoke hearts (canned or jarred), drained and chopped
  • ½ cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 2 tbsp mayonnaise or keto-friendly Alfredo sauce (for base)
  • Garlic powder, Italian seasoning (to taste)
  • Optional: Spinach or red onion slices

🔥 Directions:

  1. Preheat oven to 400°F (200°C).
  2. Make the crust:
    • In a microwave-safe bowl, melt mozzarella and cream cheese (about 45–60 seconds).
    • Stir until smooth, then add almond flour, egg, and salt. Mix until it forms a dough.
    • Roll between two parchment sheets into a pizza shape.
    • Bake crust for 8–10 minutes or until lightly golden.
  3. Prepare the base:
    • Spread mayo or Alfredo sauce over the crust.
    • Sprinkle garlic powder and Italian seasoning.
  4. Add toppings:
    • Evenly spread chicken, bacon, artichokes, and optional spinach/onion.
    • Top with shredded mozzarella and Parmesan.
  5. Bake again:
    • Return to oven and bake for 8–10 more minutes until cheese is bubbly and golden.
  6. Cool slightly, slice, and enjoy!
