Chicken Bacon Artichoke Pizza

Ingredients:
For the crust (fathead dough):
- 1 ½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- ¾ cup almond flour
- 1 egg
- Pinch of salt
For the toppings:
- ½ cup cooked chicken breast, shredded or chopped
- ¼ cup cooked crispy bacon, crumbled
- ½ cup artichoke hearts (canned or jarred), drained and chopped
- ½ cup mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
- 2 tbsp mayonnaise or keto-friendly Alfredo sauce (for base)
- Garlic powder, Italian seasoning (to taste)
- Optional: Spinach or red onion slices
🔥 Directions:
- Preheat oven to 400°F (200°C).
- Make the crust:
- In a microwave-safe bowl, melt mozzarella and cream cheese (about 45–60 seconds).
- Stir until smooth, then add almond flour, egg, and salt. Mix until it forms a dough.
- Roll between two parchment sheets into a pizza shape.
- Bake crust for 8–10 minutes or until lightly golden.
- Prepare the base:
- Spread mayo or Alfredo sauce over the crust.
- Sprinkle garlic powder and Italian seasoning.
- Add toppings:
- Evenly spread chicken, bacon, artichokes, and optional spinach/onion.
- Top with shredded mozzarella and Parmesan.
- Bake again:
- Return to oven and bake for 8–10 more minutes until cheese is bubbly and golden.
- Cool slightly, slice, and enjoy!
