Chicken Avocado Ranch Burritos

Ingredients

  • 2 cups cooked shredded or diced chicken (grilled, rotisserie, or leftover)
  • 1 ripe avocado, diced
  • ¼ cup ranch dressing (use sugar-free for keto)
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup chopped fresh cilantro (optional)
  • ½ cup diced tomatoes or cherry tomatoes
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 4 large tortillas (use low-carb or keto tortillas if needed)
  • Butter or oil for toasting

🥣 Instructions

  1. Make the filling:
    In a bowl, mix chicken, avocado, ranch dressing, cheese, tomatoes, cilantro, garlic powder, salt, and pepper. Gently stir to combine.
  2. Assemble the burritos:
    Lay out the tortillas. Divide the filling evenly among them, placing it in the center of each tortilla. Fold in the sides and roll tightly like a burrito.
  3. Toast the burritos (optional but tasty!):
    Heat a nonstick pan over medium heat. Add a little butter or oil and toast each burrito seam-side down for 2–3 minutes until golden and crispy. Flip and toast the other side.
  4. Serve warm:
    Slice in half and enjoy with extra ranch or salsa on the side!
