Ingredients:

For the Crumbles:

  • 1 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup cold unsalted butter (cubed)
  • 1/2 tsp cinnamon (optional)

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy cream (whipped to soft peaks)

For the Cherry Topping:

  • 1 cup cherry pie filling or fresh cherries cooked down with sugar (you can also use canned cherry topping)

Instructions:

  1. Make the Crumbles:
    • Preheat oven to 350°F (175°C).
    • Mix flour, brown sugar, and cinnamon in a bowl.
    • Add cold butter cubes and use a fork or pastry cutter to mix until crumbly.
    • Spread crumbles on a baking sheet and bake for 12-15 minutes or until golden brown. Let cool.
  2. Prepare the Cheesecake Filling:
    • Beat softened cream cheese until smooth.
    • Add powdered sugar and vanilla extract; mix well.
    • Gently fold in whipped cream until combined and fluffy.
  3. Assemble the Jars:
    • Start by placing a layer of crumbles at the bottom of each jar.
    • Add a thick layer of cheesecake filling on top of the crumbles.
    • Spoon cherry topping over the cheesecake layer.
    • Repeat layering if your jar is tall enough or just finish with crumbles on top for extra crunch.
  4. Chill:
    • Refrigerate jars for at least 2 hours to let flavors set and cheesecake firm up.
