cherry cheesecake with crumbles in a jar

Ingredients:
For the Crumbles:
- 1 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 cup cold unsalted butter (cubed)
- 1/2 tsp cinnamon (optional)
For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup heavy cream (whipped to soft peaks)
For the Cherry Topping:
- 1 cup cherry pie filling or fresh cherries cooked down with sugar (you can also use canned cherry topping)
Instructions:
- Make the Crumbles:
- Preheat oven to 350°F (175°C).
- Mix flour, brown sugar, and cinnamon in a bowl.
- Add cold butter cubes and use a fork or pastry cutter to mix until crumbly.
- Spread crumbles on a baking sheet and bake for 12-15 minutes or until golden brown. Let cool.
- Prepare the Cheesecake Filling:
- Beat softened cream cheese until smooth.
- Add powdered sugar and vanilla extract; mix well.
- Gently fold in whipped cream until combined and fluffy.
- Assemble the Jars:
- Start by placing a layer of crumbles at the bottom of each jar.
- Add a thick layer of cheesecake filling on top of the crumbles.
- Spoon cherry topping over the cheesecake layer.
- Repeat layering if your jar is tall enough or just finish with crumbles on top for extra crunch.
- Chill:
- Refrigerate jars for at least 2 hours to let flavors set and cheesecake firm up.
