🧀🌮 Cheesy Taco Soup (Classic & Crowd-Pleaser)
Ingredients
- 1 lb ground beef (or turkey)
- 1 packet taco seasoning (or homemade)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (with juice)
- 1 can Rotel (tomatoes + green chiles)
- 1 can black beans, drained & rinsed
- 1 can corn, drained
- 3 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 1½–2 cups shredded cheddar or Mexican-blend cheese
- Salt & pepper to taste
Instructions
- Brown ground beef with onion in a large pot. Drain excess fat.
- Add garlic and taco seasoning; stir 30 seconds.
- Add tomatoes, Rotel, beans, corn, and broth.
- Bring to a simmer and cook 15–20 minutes.
- Lower heat; stir in cream.
- Add cheese gradually, stirring until melted and smooth.
- Taste and adjust seasoning.

- Sour cream or Greek yogurt
- Avocado slices
- Green onions
- Jalapeños
- Cilantro

Low-Carb / Diabetic-Friendly
- Skip corn & beans
- Add cauliflower rice or zucchini
- Use heavy cream + sharp cheddar
Still cheesy, fewer carbs.
Slow Cooker
- Brown meat first
- Add everything except cheese & cream
- Cook LOW 6–7 hrs
- Stir in cheese + cream at the end
