Cheesy Mushroom Beef

🍄🧀 Cheesy Mushroom Beef Skillet

📦 Ingredients:

  • 1 lb ground beef (80–90% lean)
  • 1 tablespoon olive oil (if needed)
  • 8 oz mushrooms, sliced (cremini or white button)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional, for depth)
  • ½ teaspoon smoked paprika (optional)
  • ½ cup beef broth or stock
  • 4 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, mozzarella, or provolone work great)
  • Optional: 2 tablespoons chopped fresh parsley or green onions for garnish

👨‍🍳 Instructions:

1. Brown the Beef

  • In a large skillet over medium-high heat, cook the ground beef until browned and crumbled.
  • Drain excess fat if needed and set beef aside.

2. Sauté Mushrooms & Onion

  • In the same skillet, add a bit of oil if the pan is dry.
  • Add mushrooms and onions. Cook for 6–8 minutes, stirring occasionally, until mushrooms release moisture and start to brown.
  • Add garlic, salt, pepper, paprika, and Dijon mustard. Cook for 1 more minute.

3. Deglaze & Simmer

  • Pour in the Worcestershire sauce and beef broth. Stir and scrape up any bits from the bottom.
  • Add the cooked beef back to the pan.
  • Reduce heat to low and stir in the cream cheese until melted and combined.

4. Add the Cheese

  • Sprinkle shredded cheese evenly over the top.
  • Cover the skillet with a lid and let it sit on low for 2–3 minutes, until the cheese melts.
  • Garnish with parsley or green onions if desired.
