Cheesy Jalapeno Avocado Toast

Ingredients

  • 4 slices of Ezekiel, or Rye bread
  • 1 small ripe avocado
  • 1 Tbsp lemon juice
  • 1-2 small jalapenos, thinly sliced
  • 10 cherry tomatoes, quartered
  • 3 Tbsps shredded Mexican cheese blend

Instructions

  1. Toast your bread until nice and golden, just to your liking.
  2. Meanwhile, in a small bowl place the avocado together with a squeeze of fresh lemon juice, and mash it with a fork.
  3. Season with sea salt and pepper to your taste.
  4. Top toasted bread with mashed avocado mixture, then top it with cherry tomatoes, shredded cheese and jalapeƱo slices.
  5. Broil for 3-4 minutes, or until cheese is melted. Watch it closely! Goes from almost there to burnt…fast!
