Ingredients
- 250–300g Italian sausage (look for low-carb / no added sugar)
- 2 cups zucchini (sliced or spiralized)
- 1 cup spinach (fresh)
- ½ cup mushrooms (sliced)
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
- ½ cup heavy cream
- ¾ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- Salt & pepper to taste
Instructions
- Cook sausage:
Heat olive oil in a skillet over medium heat. Add sausage and cook until browned. Remove and slice if needed. - Sauté veggies:
In the same pan, add garlic, mushrooms, and zucchini. Cook for 3–4 minutes until slightly soft. - Add greens:
Stir in spinach and cook until wilted. - Make it creamy:
Pour in heavy cream, add Italian seasoning, salt, pepper, and chili flakes. - Combine:
Return sausage to the pan and mix well. - Add cheese:
