Cheesy Italian Sausage Skillet (Diabetic-Friendly)

Ingredients

  • 250–300g Italian sausage (look for low-carb / no added sugar)
  • 2 cups zucchini (sliced or spiralized)
  • 1 cup spinach (fresh)
  • ½ cup mushrooms (sliced)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp chili flakes (optional)
  • ½ cup heavy cream
  • ¾ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Cook sausage:
    Heat olive oil in a skillet over medium heat. Add sausage and cook until browned. Remove and slice if needed.
  2. Sauté veggies:
    In the same pan, add garlic, mushrooms, and zucchini. Cook for 3–4 minutes until slightly soft.
  3. Add greens:
    Stir in spinach and cook until wilted.
  4. Make it creamy:
    Pour in heavy cream, add Italian seasoning, salt, pepper, and chili flakes.
  5. Combine:
    Return sausage to the pan and mix well.
  6. Add cheese:
    Sprinkle mozzarella and parmesan on top. Cover and cook on low until melted and bubbly.
