Ingredients:

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1Β½ cups milk (whole milk preferred for creaminess)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ΒΌ cup Parmesan cheese (optional, for depth)
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional, but great for creamy sauces)
  • Optional topping: breadcrumbs mixed with a little melted butter

Instructions:

1. Preheat & Prep Veggies:

  • Preheat oven to 375Β°F (190Β°C).
  • Lightly grease a medium baking dish.
  • Steam or boil broccoli and cauliflower just until tender-crisp, about 3–4 minutes. Drain and set aside.

2. Make the Cheese Sauce:

  • In a saucepan, melt butter over medium heat.
  • Whisk in the flour and cook for 1–2 minutes to form a roux.
  • Gradually whisk in the milk and bring to a gentle simmer. Stir continuously until it thickens slightly.
  • Stir in cheddar cheese, Parmesan (if using), salt, pepper, and nutmeg. Mix until smooth and creamy.

3. Combine & Assemble:

  • Toss the cooked broccoli and cauliflower in the cheese sauce until coated.
  • Transfer everything to the prepared baking dish.
  • Sprinkle extra cheddar cheese (and breadcrumbs if using) over the top.

4. Bake:

  • Bake for 20–25 minutes, or until bubbling and golden on top.
  • Optional: Broil for 2–3 minutes at the end for an extra crispy topping.

5. Serve Warm:

  • Garnish with a sprinkle of chopped parsley, chives, or even a dash of hot sauce if desired.
