π§ Cheesy Broccoli & Cauliflower Bake
Ingredients:
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1Β½ cups milk (whole milk preferred for creaminess)
- 1 cup shredded cheddar cheese (plus extra for topping)
- ΒΌ cup Parmesan cheese (optional, for depth)
- Salt and pepper, to taste
- Pinch of nutmeg (optional, but great for creamy sauces)
- Optional topping: breadcrumbs mixed with a little melted butter
Instructions:
1. Preheat & Prep Veggies:
- Preheat oven to 375Β°F (190Β°C).
- Lightly grease a medium baking dish.
- Steam or boil broccoli and cauliflower just until tender-crisp, about 3β4 minutes. Drain and set aside.
2. Make the Cheese Sauce:
- In a saucepan, melt butter over medium heat.
- Whisk in the flour and cook for 1β2 minutes to form a roux.
- Gradually whisk in the milk and bring to a gentle simmer. Stir continuously until it thickens slightly.
- Stir in cheddar cheese, Parmesan (if using), salt, pepper, and nutmeg. Mix until smooth and creamy.
3. Combine & Assemble:
- Toss the cooked broccoli and cauliflower in the cheese sauce until coated.
- Transfer everything to the prepared baking dish.
- Sprinkle extra cheddar cheese (and breadcrumbs if using) over the top.
4. Bake:
- Bake for 20β25 minutes, or until bubbling and golden on top.
- Optional: Broil for 2β3 minutes at the end for an extra crispy topping.
5. Serve Warm:
- Garnish with a sprinkle of chopped parsley, chives, or even a dash of hot sauce if desired.

- Add cooked chicken or bacon for a hearty main.
- Mix in a little mustard or garlic powder for added depth.
- Use a mix of cheeses: Gruyère, Fontina, or Monterey Jack work great.
