Cheesy Broc ‘n’ Roll: Try Our Keto-Friendly Stuffed Chicke

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375ยฐF (190ยฐC).
  2. Prepare the Chicken:
    • Carefully butterfly the chicken breasts by slicing them horizontally, without cutting all the way through. Open them like a book.
    • Season both sides of the chicken breasts with salt, pepper, paprika, oregano, thyme, and onion powder.
  3. Prepare the Filling:
    • In a medium bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, Parmesan cheese, and minced garlic. Mix well until all ingredients are thoroughly combined.
  4. Stuff the Chicken:
    • Spoon the broccoli and cheese mixture onto one side of each butterflied chicken breast. Fold the other side over to enclose the filling. You can use toothpicks to secure the edges if necessary.
  5. Cook the Chicken:
    • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and cook for about 3-4 minutes on each side, until they are golden brown.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the filling is hot and bubbly.
  6. Serve:
    • Remove the toothpicks if used and let the chicken rest for a few minutes before serving. Pair with a side salad or steamed veggies for a complete keto-friendly meal….
