Cheesy Baked Chicken and Peppers: The Ultimate Comfort Food Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add the sliced peppers and onion. Cook until they are softened and slightly caramelized, about 5-7 minutes.
  5. Place the chicken breasts in a baking dish. Top each chicken breast with an equal amount of the cooked peppers and onions.
  6. Sprinkle shredded cheddar cheese evenly over the chicken and vegetables.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Remove from the oven and let it rest for a few minutes before serving.
