Cheesy Baked Chicken and Peppers: The Ultimate Comfort Food Recipe

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded reduced-fat cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
- In the same skillet, add the sliced peppers and onion. Cook until they are softened and slightly caramelized, about 5-7 minutes.
- Place the chicken breasts in a baking dish. Top each chicken breast with an equal amount of the cooked peppers and onions.
