Cheesesteak Sloppy Joes (Low-Carb / Diabetic-Friendly)

Ingredients

  • 1 lb lean ground beef (or ground turkey)
  • 1 tbsp olive oil (if needed)
  • ½ green bell pepper, finely diced
  • ½ onion, finely diced (keep small for carbs)
  • 1 cup mushrooms, finely chopped (bulk + fiber, low carb)
  • 2 cloves garlic, minced
  • ½ cup beef broth (low sodium)
  • 1 tbsp Worcestershire sauce (no sugar added)
  • 1 tsp steak seasoning (or salt + pepper)
  • ½ tsp paprika
  • 4–6 slices provolone cheese (or shredded provolone)
  • Optional: splash of heavy cream (1–2 tbsp for richness)

Instructions

  1. Brown ground beef in a skillet over medium heat. Drain excess fat if needed.
  2. Add peppers, onion, mushrooms, and garlic. Cook until soft (5–7 min).
  3. Stir in beef broth, Worcestershire, seasoning, and paprika.
  4. Simmer 5–10 minutes until thick and sloppy (but not soupy).
  5. Lay provolone on top, cover, and let melt.
  6. Stir gently or leave cheesy layers—your call 😏

How to Serve (Low-Carb Options)

  • Lettuce wraps (butter lettuce or romaine)
  • Over sautéed cabbage
  • On low-carb buns (≤5g net carbs)
