Diabetic-Friendly “Chantal-Style” New York Cheesecake

🧾 Ingredients

🥧 Crust (Low-Carb)

  • 1 ½ cups almond flour
  • 3 tbsp melted butter
  • 2 tbsp powdered erythritol or monk fruit
  • Pinch of salt

🧀 Filling

  • 3 (8 oz / 225g) blocks full-fat cream cheese (softened)
  • ¾ cup powdered erythritol or monk fruit sweetener
  • 3 large eggs (room temperature)
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp heavy cream

👩‍🍳 Instructions

1️⃣ Make the Crust

  1. Preheat oven to 175°C (350°F).
  2. Mix almond flour, butter, sweetener, and salt.
  3. Press into bottom of 9-inch springform pan.
  4. Bake 8–10 minutes. Cool slightly.

2️⃣ Prepare Filling

  1. Beat cream cheese until smooth (don’t overmix).
  2. Add sweetener and mix gently.
  3. Add eggs one at a time on low speed.
  4. Mix in sour cream, vanilla, lemon juice, and heavy cream until just combined.

3️⃣ Bake

  1. Pour filling over crust.
  2. Bake at 165°C (325°F) for 55–65 minutes.
  3. Center should jiggle slightly.
  4. Turn off oven, crack door open, cool slowly 1 hour.
  5. Refrigerate at least 6 hours (overnight best).

Approximate carbs: 4–6g net carbs per slice (12 slices).
