CAULIFLOWER HASH BROWNSI

Ingredients:
- 1 medium head of cauliflower, grated or finely chopped (about 4 cups)
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour or breadcrumbs
- 1 egg, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking oil (olive oil or vegetable oil) for frying

Instructions:
- Prepare the Cauliflower:
- Wash the cauliflower and remove any leaves. Grate the cauliflower using a box grater or chop it finely in a food processor until it resembles rice.
- Cook the Cauliflower:
- Place the grated cauliflower in a microwave-safe bowl and microwave on high for 4-5 minutes, or until it is tender. Alternatively, you can steam the cauliflower until tender. Let it cool slightly.
- Form the Hash Browns:
- In a large mixing bowl, combine the cooked cauliflower, grated Parmesan cheese, almond flour or breadcrumbs, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape and Fry:
- Heat a non-stick skillet over medium heat and add a drizzle of cooking oil.
- Take a spoonful of the cauliflower mixture and shape it into a small patty or hash brown shape. Place it onto the skillet.
- Cook the hash browns for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a spatula to carefully flip them over halfway through cooking.
- Serve:
- Once cooked, transfer the cauliflower hash browns to a plate lined with paper towels to absorb any excess oil.
