CAULIFLOWER HASH BROWNSI

Ingredients:

  • 1 medium head of cauliflower, grated or finely chopped (about 4 cups)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour or breadcrumbs
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking oil (olive oil or vegetable oil) for frying

Instructions:

  1. Prepare the Cauliflower:
    • Wash the cauliflower and remove any leaves. Grate the cauliflower using a box grater or chop it finely in a food processor until it resembles rice.
  2. Cook the Cauliflower:
    • Place the grated cauliflower in a microwave-safe bowl and microwave on high for 4-5 minutes, or until it is tender. Alternatively, you can steam the cauliflower until tender. Let it cool slightly.
  3. Form the Hash Browns:
    • In a large mixing bowl, combine the cooked cauliflower, grated Parmesan cheese, almond flour or breadcrumbs, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Shape and Fry:
    • Heat a non-stick skillet over medium heat and add a drizzle of cooking oil.
    • Take a spoonful of the cauliflower mixture and shape it into a small patty or hash brown shape. Place it onto the skillet.
    • Cook the hash browns for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a spatula to carefully flip them over halfway through cooking.
  5. Serve:
    • Once cooked, transfer the cauliflower hash browns to a plate lined with paper towels to absorb any excess oil.
    • Serve hot, optionally garnished with chopped fresh herbs or a dollop of sour cream.
