Cauliflower & Hamburger Soup

INGREDIENTS:


1 lb. ground beef
One cup cheddar cheese
1 medium cauliflower
Four oz. cream cheese
1 small onion
4 cups beef broth
1 cup heavy cream
Two garlic pieces
One tbsp. olive oil
Black pepper
One teaspoon dried thyme
Salt


INGREDIENT NOTES:


BEEF:
20% fat content containing beef is used to prepare this soup according to the keto diet.
CAULIFLOWER:
Fresh florets of cauliflower are used in preparing this soup for a nice texture.
ONION:
We use yellow onions for the addition of mild sweetness and flavor.
CREAM CHEESE:
Prepare this soup with whole fat cream cheese, and we would have to use soft cream cheese to blend smoothly.
BEEF BROTH:
We use beef broth as a base ingredient, and it contains low sodium, so we can add salt ourselves.
CHEDDAR CHEESE:
We use sharp cheddar cheese to prepare this soup; it adds a strong cheesy taste to the soup.
GARLIC:
Fresh garlic is used to add to this soup to deepen the flavor and aroma.
THYME:
It is added to provide the earthy and herby taste and aroma in the soup.
HEAVY CREAM:
We use heavy cream so its consistency gets thick and it also makes it smooth and creamy.

INSTRUCTIONS:

  1. Put the oil on a moderate setting in a pan.
  2. Then include beef and sauté to get brown and eliminate the excess fat.
  3. Sauté the garlic along with the onions for two minutes to get an aroma.
  4. Include the beef, thyme, black pepper, cauliflower florets, salt, and beef broth in the crockpot and cook on low flame for four hours.
  5. Stir the cream cheese & heavy cream in the soup to form a smooth consistency.
  6. Then, include cheddar cheese and melt it by mixing and cooking for an extra fifteen minutes on a low setting.
  7. Add the soup to a serving bowl with a ladle and garnish with parsley, and serve warm.

  • Serve this soup along with a keto almond flour biscuit.
  • Sprinkle bacon crumbs in the soup for an additional crunchy taste.
  • Top this soup with green onions.
