cauliflower florets and chickpeas

Ingredients:

1 head cauliflower, cut into florets

1 can chickpeas, drained and rinsed

1 block halloumi cheese, sliced

1/4 cup olive oil

1 tablespoon honey

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper

Salt and pepper to taste

1/4 cup almonds, sliced

Fresh parsley, chopped (for garnish)

Instructions:

Preheat your oven to 400°F (200°C).

Toss cauliflower florets and chickpeas with olive oil, honey, cumin, coriander, paprika, cayenne, salt, and pepper.

Spread the cauliflower and chickpeas on a baking sheet.

Roast for 20-25 minutes, or until the cauliflower is tender and slightly browned.

Add the halloumi slices to the baking sheet and roast for an additional 5-7 minutes, until golden brown.

Sprinkle with sliced almonds and roast for another 2-3 minutes.

Garnish with fresh parsley and serve hot.
