  • 2 cups cauliflower rice (fresh or frozen, cooked and squeezed dry)
  • 2 eggs
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/4 tsp garlic powder
  • 1/4 tsp baking powder
  • Salt and pepper, to taste
  • Optional: chopped fresh herbs (parsley, rosemary, etc.)

  1. Prep Cauliflower:
    • If using fresh cauliflower, pulse florets in a food processor until rice-like.
    • Microwave for 3โ€“4 minutes, then place in a clean towel and squeeze out as much moisture as possible.
  2. Mix Ingredients:
    • In a bowl, mix the drained cauliflower, eggs, mozzarella, Parmesan, garlic powder, baking powder, salt, and pepper until well combined.
  3. Shape the Bread:
    • Preheat oven to 375ยฐF (190ยฐC).
    • Line a baking sheet with parchment paper.
    • Spread the mixture into a rectangle or loaf shape about ยฝ inch thick.
  4. Bake:
    • Bake for 25โ€“30 minutes, or until golden and firm.
    • For extra crisp, broil for 2โ€“3 minutes at the end.
  5. Cool & Slice:
    • Let cool slightly before slicing into squares or strips.

  • Add 1 tbsp almond flour or coconut flour for extra structure.
  • Make it cheesy garlic bread by brushing with butter, garlic, and herbs before baking.
