‘Cauliflower Bread Keto’

๐ Cauliflower Bread (Keto-Friendly)
๐งพ Ingredients:
- 2 cups cauliflower rice (fresh or frozen, cooked and squeezed dry)
- 2 eggs
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1/4 tsp garlic powder
- 1/4 tsp baking powder
- Salt and pepper, to taste
- Optional: chopped fresh herbs (parsley, rosemary, etc.)
๐ฉโ๐ณ Instructions:
- Prep Cauliflower:
- If using fresh cauliflower, pulse florets in a food processor until rice-like.
- Microwave for 3โ4 minutes, then place in a clean towel and squeeze out as much moisture as possible.
- Mix Ingredients:
- In a bowl, mix the drained cauliflower, eggs, mozzarella, Parmesan, garlic powder, baking powder, salt, and pepper until well combined.
- Shape the Bread:
- Preheat oven to 375ยฐF (190ยฐC).
- Line a baking sheet with parchment paper.
- Spread the mixture into a rectangle or loaf shape about ยฝ inch thick.
- Bake:
- Bake for 25โ30 minutes, or until golden and firm.
- For extra crisp, broil for 2โ3 minutes at the end.
- Cool & Slice:
- Let cool slightly before slicing into squares or strips.
๐ Optional Variations:
- Add 1 tbsp almond flour or coconut flour for extra structure.
- Make it cheesy garlic bread by brushing with butter, garlic, and herbs before baking.
- Turn into mini sandwich buns using muffin top molds or a whoopie pie pan.
