Cauliflower Bread Keto

Ingredients:

  • 2 cups cauliflower rice (fresh or frozen, cooked and squeezed dry)
  • 2 eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp baking powder
  • Salt & pepper to taste
  • Optional: chopped parsley or Italian seasoning for extra flavor

🍞 Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. Prep Cauliflower: If using fresh, pulse cauliflower in a food processor to rice it. Microwave for 4-5 minutes, then place it in a clean towel and squeeze out as much moisture as possible.
  3. Mix: In a bowl, combine cauliflower rice, eggs, cheeses, seasonings, and baking powder. Mix into a thick dough.
  4. Shape: Spread the mixture onto the tray in a rectangle or loaf shape (½ inch thick).
  5. Bake: Bake for 20-25 minutes until golden brown and firm.
  6. Optional: For crispier top, broil for 2-3 minutes at the end.
  7. Cool & Slice: Let cool slightly before slicing into bread pieces.

  • Make mini pizza bases
  • Serve with soup or dips
