Cauliflower Bread Keto

Ingredients:
- 2 cups cauliflower rice (fresh or frozen, cooked and squeezed dry)
- 2 eggs
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp baking powder
- Salt & pepper to taste
- Optional: chopped parsley or Italian seasoning for extra flavor
🍞 Instructions:
- Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
- Prep Cauliflower: If using fresh, pulse cauliflower in a food processor to rice it. Microwave for 4-5 minutes, then place it in a clean towel and squeeze out as much moisture as possible.
- Mix: In a bowl, combine cauliflower rice, eggs, cheeses, seasonings, and baking powder. Mix into a thick dough.
- Shape: Spread the mixture onto the tray in a rectangle or loaf shape (½ inch thick).
- Bake: Bake for 20-25 minutes until golden brown and firm.
- Optional: For crispier top, broil for 2-3 minutes at the end.
- Cool & Slice: Let cool slightly before slicing into bread pieces.
