Carb bacon cheddar mini cheese balls

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh chives, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (for garnish)
  • 1 tbsp chopped parsley (for garnish, optional)

Instructions:

  1. Prepare the Bacon: Cook the bacon in a skillet until crispy. Drain on paper towels, then crumble it into small pieces.
  2. Mix the Cheese Balls: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, Parmesan cheese, chives, garlic powder, onion powder, black pepper, and paprika. Mix everything together until well combined.
  3. Shape the Cheese Balls: Use your hands to form the cheese mixture into small bite-sized balls, about 1 inch in diameter. You should get around 12-15 mini cheese balls.
  4. Chill: Place the cheese balls on a tray and refrigerate for at least 30 minutes to firm up.
  5. Garnish (Optional): Before serving, you can roll the cheese balls in some additional chopped parsley or a sprinkle of paprika for extra color and flavor.
