For the Steak & Onions
- 1 ribeye steak (1 lb)
- 1 yellow onion, sliced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- Β½ tsp black pepper
- Β½ tsp paprika
- Β½ tsp garlic powder
- Optional: 1 tsp thyme or rosemary
For the Creamy Mashed Potatoes
- 2β3 medium potatoes (russet or Yukon)
- 2 tbsp butter
- ΒΌ cup milk (or cream)
- Salt & pepper to taste
- Optional: 1β2 tbsp sour cream or Greek yogurt for extra creaminess
π§βπ³ Instructions
β Step 1: Prep Potatoes
- Peel potatoes and cut into chunks.
- Boil in salted water for 12β15 minutes, until fork-tender.
- Drain and mash with butter, milk, salt, and pepper.
(Add sour cream if using.) - Keep warm while steak cooks.
β Step 2: Season the Steak
- Pat steak dry with paper towels.
- Rub both sides with salt, pepper, paprika, and garlic powder.
- Let sit 5 minutes to absorb flavors.
β Step 3: Caramelize Onions (Air Fryer)
- Toss sliced onions with olive oil, salt, and a pinch of pepper.
- Air fry at 190Β°C / 375Β°F for 10 minutes, shaking halfway.
- Add garlic and cook 2 more minutes until golden.
Tip: If your air fryer basket is small, caramelize onions in a skillet while steak cooks.
β Step 4: Cook the Ribeye in Air Fryer
- Preheat air fryer to 200Β°C / 400Β°F.
- Place steak in the basket.
- Cook:
- 8β10 min for medium-rare
- 10β12 min for medium
- 12β14 min for medium-well
- Flip halfway through.
Internal temp guide:
- 52Β°C / 125Β°F = rare
- 57Β°C / 135Β°F = medium-rare
- 63Β°C / 145Β°F = medium
- 68Β°C / 155Β°F = medium-well
β Step 5: Rest & Plate
- Remove steak and let rest 5β7 minutes.
- Plate mashed potatoes.
- Top with caramelized onions.
- Slice steak against the grain and place on top.
π Optional Sauce (Quick Pan Drip Sauce)
If you want a sauce like restaurant style:
- Add 1 tbsp butter to the onions
- Pour in ΒΌ cup beef broth
- Stir until slightly thickened
- Drizzle over steak and potatoes
