π₯π Caprese Stuffed Avocado
π§Ύ Ingredients (Serves 2):
- 2 ripe avocados, halved and pitted
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls (bocconcini or ciliegine), halved
(or chopped fresh mozzarella) - 1/4 cup fresh basil, chopped or whole small leaves
- 1β2 tbsp balsamic glaze or balsamic vinegar
- 1 tbsp olive oil
- Salt and pepper to taste
π₯ Instructions:
- Prep the Avocados:
- Cut avocados in half, remove the pit.
- Scoop out a bit of the flesh to make room for the filling (optional).
- Lightly drizzle the cut sides with olive oil and a pinch of salt.
- Make the Caprese Mix:
- In a bowl, combine tomatoes, mozzarella, and basil.
- Drizzle with olive oil and balsamic glaze (or vinegar).
- Season with salt and pepper to taste. Toss gently.
- Assemble:
- Spoon the Caprese salad into each avocado half.
- Drizzle extra balsamic glaze on top for presentation.
- Serve Immediately:
- Best served fresh and slightly chilled or at room temp.
