🧾 Ingredients (Serves 2):

  • 2 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls (bocconcini or ciliegine), halved
    (or chopped fresh mozzarella)
  • 1/4 cup fresh basil, chopped or whole small leaves
  • 1–2 tbsp balsamic glaze or balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste

  1. Prep the Avocados:
    • Cut avocados in half, remove the pit.
    • Scoop out a bit of the flesh to make room for the filling (optional).
    • Lightly drizzle the cut sides with olive oil and a pinch of salt.
  2. Make the Caprese Mix:
    • In a bowl, combine tomatoes, mozzarella, and basil.
    • Drizzle with olive oil and balsamic glaze (or vinegar).
    • Season with salt and pepper to taste. Toss gently.
  3. Assemble:
    • Spoon the Caprese salad into each avocado half.
