Cabbage with a difference

Ingredients
1 medium cabbage, chopped
6 slices of bacon, chopped
1 onion, chopped
2 garlic cloves, finely chopped
5 ml smoked paprika
Salt and pepper to taste
30 ml butter
15 ml of vinegar
Fresh parsley or spring onion, chopped (for garnish)
Method
In a large pan, roast the chopped bacon over moderate heat until it is crisp. Remove the bacon and put it aside, but leave the bacon fat in the pan.
Add the chopped onion to the pan with the bacon fat and fry for about 5 minutes until it is tender. Then add the finely chopped garlic and bake for another 1-2 minutes until fragrant.
Add the chopped cabbage to the skillet and stir it with the onions and garlic.
Cook for 10-15 minutes, stir occasionally, until cabbage is tender and begins to caramelize.
Sprinkle the smoked paprika and stir well.
Season with salt and pepper to taste. Add the butter and let it melt as you stir it in.
If you like a more sour flavor, sprinkle the vinegar over and mix well.
Stir the cooked bacon back into the cabbage.
Garnish with freshly chopped parsley just before serving.
