Diabetic-Friendly Cabbage Soup

🥣 Ingredients

  • 2 cups chopped cabbage
  • 1 cup spinach or kale (optional)
  • 1 medium zucchini (chopped)
  • 1 small carrot (sliced thin – optional, moderate amount)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups low-sodium vegetable or chicken broth
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • ½ tsp turmeric (optional)
  • 1 tsp dried oregano or thyme
  • Salt to taste

🔥 Instructions

  1. Heat olive oil in a pot.
  2. Sauté onion and garlic until fragrant.
  3. Add carrot, zucchini, and cabbage—cook for 3–4 minutes.
  4. Pour in broth and bring to a boil.
  5. Reduce heat and simmer for 15–20 minutes.
  6. Add spinach at the end and cook 2–3 more minutes.
  7. Season and serve warm.

🍗 Optional Protein Boost (Recommended for Diabetics)

Add one of these to make it more balanced:

  • Shredded chicken
  • Lean ground turkey
  • Beans (small portion, if tolerated)
