Ingredients

  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 4 large egg yolks
  • 1/2 cup powdered erythritol or monk fruit sweetener (or sweetener of choice, adjust to taste)
  • 1/2 cup pecans, chopped
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt (optional, if you like a touch of saltiness)

Instructions

  1. Toast the Pecans:
    • In a skillet, melt the butter over medium heat.
    • Add the chopped pecans and a pinch of salt (if using).
    • Toast the pecans for about 4-5 minutes, stirring often, until they’re golden and fragrant. Set them aside to cool.
  2. Prepare the Ice Cream Base:
    • In a medium saucepan, heat the almond milk and heavy cream over medium heat. Stir occasionally until the mixture is hot but not boiling.
    • While the cream mixture heats, whisk the egg yolks and sweetener in a bowl until they’re smooth and creamy.
  3. Temper the Eggs:
    • Gradually add a small amount of the hot cream mixture into the egg mixture while whisking continuously to prevent curdling.
    • Slowly pour the tempered egg mixture back into the saucepan with the remaining cream.
  4. Cook the Custard:
    • Cook the mixture over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 8-10 minutes).
    • Remove from heat and stir in the vanilla extract.
  5. Chill the Mixture:
    • Pour the custard into a bowl, cover with plastic wrap (pressed directly onto the surface), and refrigerate for at least 4 hours or until fully chilled.
  6. Churn the Ice Cream:
    • Once the mixture is cold, pour it into an ice cream maker and churn according to the manufacturer’s instructions.
    • In the last few minutes of churning, add in the toasted pecans.
  7. Freeze and Serve:
    • Transfer the ice cream to a lidded container and freeze for at least 1-2 hours, or until it reaches a firmer texture.

Tips

  • No Ice Cream Maker? After chilling, pour the mixture into a container and freeze. Stir it every 30 minutes until it’s firm to prevent ice crystals.
