BURSTING WITH FLAVOR BLUEBERRY MUFFINS
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, melted and cooled slightly
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)
Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, chilled and cut into small pieces
Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the melted butter, sour cream, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
- Gently fold in the blueberries until evenly distributed throughout the batter.
- In a small bowl, mix together the streusel topping ingredients: flour, sugar, and chilled butter pieces. Use your fingers to crumble the mixture until it resembles coarse crumbs.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full. Sprinkle the streusel topping over each muffin.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
