Ingredients:
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 cup breadcrumbs
- 1 cup buffalo sauce
- 1/2 cup unsalted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Ranch or blue cheese dressing for dipping
- Celery sticks for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces.
- In three separate bowls, place the flour in one, buttermilk in another, and breadcrumbs in the third.
- Season the flour with salt and pepper. Dip each piece of chicken into the flour, then into the buttermilk, and finally coat it in breadcrumbs. Place the coated chicken on a baking sheet lined with parchment paper.
- Bake the chicken in the preheated oven for about 20-25 minutes or until golden brown and cooked through.
- While the chicken is baking, prepare the buffalo sauce. In a saucepan, combine the melted butter, buffalo sauce, garlic powder, onion powder, oregano, and paprika. Heat over low heat until the mixture is well combined and heated through.
- Once the chicken is cooked, transfer it to a large bowl. Pour the buffalo sauce over the chicken and toss until the pieces are well coated.
- Serve the buffalo chicken with celery sticks and a side of ranch or blue cheese dressing for dipping.
