Broccoli Apple Salad

Ingredients:
- 2 cups fresh broccoli florets (steamed or raw, depending on preference)
- 1 large apple, cored and diced (choose a crisp variety like Granny Smith or Honeycrisp)
- 1/4 cup red onion, finely diced
- 1/4 cup low-fat Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey (optional for sweetness)
- Salt and pepper to taste
- 1/4 cup sunflower seeds or slivered almonds (optional, for crunch)
Instructions:
- Prepare the broccoli: If you’re using raw broccoli, chop it into small florets. If you prefer steamed broccoli, steam the florets for about 3–5 minutes until they are bright green and tender but still crisp.
- Prepare the apples: Dice the apple into small chunks, leaving the skin on for extra fiber and nutrients.
- Make the dressing: In a small bowl, whisk together the Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and pepper until smooth and well combined.
- Combine the salad: In a large bowl, combine the broccoli, diced apple, and red onion. Pour the dressing over the top and toss gently to coat everything evenly.
- Add crunch: Top with sunflower seeds or slivered almonds if desired, for an extra crunch.
- Serve and enjoy: Serve immediately or chill for 30 minutes to let the flavors meld together.
