Broccoli Apple Salad

Ingredients:

  • 2 cups fresh broccoli florets (steamed or raw, depending on preference)
  • 1 large apple, cored and diced (choose a crisp variety like Granny Smith or Honeycrisp)
  • 1/4 cup red onion, finely diced
  • 1/4 cup low-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey (optional for sweetness)
  • Salt and pepper to taste
  • 1/4 cup sunflower seeds or slivered almonds (optional, for crunch)

Instructions:

  1. Prepare the broccoli: If you’re using raw broccoli, chop it into small florets. If you prefer steamed broccoli, steam the florets for about 3–5 minutes until they are bright green and tender but still crisp.
  2. Prepare the apples: Dice the apple into small chunks, leaving the skin on for extra fiber and nutrients.
  3. Make the dressing: In a small bowl, whisk together the Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and pepper until smooth and well combined.
  4. Combine the salad: In a large bowl, combine the broccoli, diced apple, and red onion. Pour the dressing over the top and toss gently to coat everything evenly.
  5. Add crunch: Top with sunflower seeds or slivered almonds if desired, for an extra crunch.
  6. Serve and enjoy: Serve immediately or chill for 30 minutes to let the flavors meld together.
