- 1 tbsp cornstarch or xanthan gum (for thickening)
- ½ tsp vanilla extract
- ¼ tsp salt

Instructions
1. Prepare the Almond Flour Crust:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Mix Crust Ingredients: In a medium bowl, combine almond flour, coconut flour, powdered erythritol, and salt. Stir in melted butter and egg until the mixture forms a dough.
- Press Into Pan: Press the dough evenly into the bottom and up the sides of a 9-inch pie pan. Use the back of a spoon or your fingers to smooth it out.
- Bake Crust: Bake the crust for 10 minutes, then remove from the oven and let it cool slightly while you prepare the filling.
2. Prepare the Blueberry Filling:
- Cook Blueberries: In a medium saucepan, combine blueberries, powdered erythritol, lemon juice, lemon zest (if using), cornstarch or xanthan gum, vanilla extract, and salt.
- Simmer: Cook over medium heat, stirring frequently, until the mixture begins to thicken and bubble. This should take about 5-10 minutes.
- Cool: Once thickened, remove from heat and let it cool slightly.
3. Assemble and Bake:
- Fill Crust: Pour the blueberry filling into the pre-baked almond flour crust, spreading it evenly.
- Bake Pie: Bake the pie for an additional 20-25 minutes, or until the filling is bubbly and the crust is golden brown.
- Cool: Allow the pie to cool completely before slicing. This helps the filling to set properly.
Tips:
- Sweetener Adjustments: You can adjust the sweetness to your taste by adding more or less erythritol or your preferred keto sweetener.
- Thickening Agent: If you prefer a more natural thickening agent, you can use chia seeds or ground flaxseeds instead of cornstarch or xanthan gum. Just be aware that it might alter the texture slightly.
