BLOOMING QUESADILLA RING

Ingredients

  • Tortillas: 8-10 medium-sized
  • Shredded Cheese: 2 cups (mix of cheddar and mozzarella)
  • Cooked Chicken (optional): 1 cup, shredded or diced
  • Bell Peppers: 1 cup, thinly sliced
  • Onions: ½ cup, thinly sliced
  • Jalapenos (optional): ¼ cup, sliced
  • Fresh Cilantro: ¼ cup, chopped
  • Seasonings: 1 tsp each of cumin, paprika, and garlic powder; salt and pepper to taste
  • Olive Oil or Cooking Spray: for brushing
  • Salsa, Guacamole, and Sour Cream: for serving

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Prepare Filling: In a bowl, combine 2 cups shredded cheese, 1 cup cooked chicken (if using), 1 cup sliced bell peppers, ½ cup sliced onions, ¼ cup sliced jalapenos (if desired), ¼ cup chopped cilantro, and the seasonings.
  3. Assemble Quesadillas: Place a portion of the filling on one half of each tortilla and fold it over to form a half-moon shape. Repeat this for all tortillas.
  4. Create the Ring: Arrange the quesadillas on a round baking sheet or pizza pan to form a ring, with the straight edges facing outwards.
  5. Brush with Oil: Lightly brush or spray the tops of the quesadillas with olive oil or cooking spray.
  6. Bake: Bake for 15-20 minutes, or until the quesadillas are golden and the cheese has melted.
  7. Serve: Allow the ring to cool slightly before serving. Place bowls of salsa, guacamole, and sour cream in the center of the ring for dipping.
  8. Garnish: Optionally, garnish with additional cilantro or green onions.
