Black Bean Taco Salad

Ingredients:

  • 1 can black beans (rinsed and drained)
  • 4 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • ½ red onion (thinly sliced)
  • 1 cup corn kernels (optional)
  • 1 cup shredded cheddar cheese (optional)
  • 1 cup crushed tortilla chips (optional for crunch)
  • ¼ cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • Salt & pepper to taste
  • For the dressing:
    • 3 tbsp olive oil
    • 1 tbsp lime juice
    • 1 tsp honey or agave syrup
    • 1 tsp garlic powder
    • Salt & pepper to taste

Instructions:

  1. Prepare the Salad Base:
    • In a large bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, avocado, and red onion.
  2. Add the Extras:
    • If using, add the corn kernels, shredded cheddar cheese, and crushed tortilla chips for an extra layer of texture and flavor.
  3. Make the Dressing:
    • In a small bowl, whisk together the olive oil, lime juice, honey/agave syrup, garlic powder, cumin, chili powder, salt, and pepper. Adjust seasoning to taste.
  4. Toss the Salad:
    • Drizzle the dressing over the salad and toss everything together until it’s well coated.
  5. Finish and Serve:
    • Garnish with fresh cilantro and a squeeze of lime juice before serving.
