Black Bean Taco Salad

Ingredients:
- 1 can black beans (rinsed and drained)
- 4 cups romaine lettuce (chopped)
- 1 cup cherry tomatoes (halved)
- 1 avocado (diced)
- ½ red onion (thinly sliced)
- 1 cup corn kernels (optional)
- 1 cup shredded cheddar cheese (optional)
- 1 cup crushed tortilla chips (optional for crunch)
- ¼ cup fresh cilantro (chopped)
- Juice of 1 lime
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt & pepper to taste
- For the dressing:
- 3 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey or agave syrup
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions:
- Prepare the Salad Base:
- In a large bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, avocado, and red onion.
- Add the Extras:
- If using, add the corn kernels, shredded cheddar cheese, and crushed tortilla chips for an extra layer of texture and flavor.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, lime juice, honey/agave syrup, garlic powder, cumin, chili powder, salt, and pepper. Adjust seasoning to taste.
- Toss the Salad:
- Drizzle the dressing over the salad and toss everything together until it’s well coated.
- Finish and Serve:
- Garnish with fresh cilantro and a squeeze of lime juice before serving.
