1 cup crushed tortilla chips (optional for crunch)
¼ cup fresh cilantro (chopped)
Juice of 1 lime
1 tsp cumin powder
1 tsp chili powder
Salt & pepper to taste
For the dressing:
3 tbsp olive oil
1 tbsp lime juice
1 tsp honey or agave syrup
1 tsp garlic powder

Instructions:
Prepare the Salad Base:
In a large bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, avocado, and red onion.
Add the Extras:
If using, add the corn kernels, shredded cheddar cheese, and crushed tortilla chips for an extra layer of texture and flavor.
Make the Dressing:
In a small bowl, whisk together the olive oil, lime juice, honey/agave syrup, garlic powder, cumin, chili powder, salt, and pepper. Adjust seasoning to taste.
Toss the Salad:
Drizzle the dressing over the salad and toss everything together until it’s well coated.
Finish and Serve:
Garnish with fresh cilantro and a squeeze of lime juice before serving.
