Black Bean & Sweet Potato Chili
Attached is a combination of Chili’s I’ve made over the year and this one i guess is now My own
3 BEAN CHILI
1 chopped Onion
8 cloves Garlic
2green, 2 red, 2 yellow peppers
1 Jalapeño
4 sweet potatoes
3 cans tomato’s sauce
1 large can diced tomatos
1 chipotle pepper
2 cans corn
2 cans each Red , black pinto/ white beans
2 tablespoons chili powder
2 tablespoons cumin
2 tablespoons oregano
2 tablespoons onion powder
1 Teaspoon cayenne
2 teaspoons smoked paprika
Salt & Pepper to taste
1. Cover the Pot with about 1/2” water.
Sauté garlic & onion for @ 6- 8 min.
2. Add about a cup of veg broth, peppers, & sauté for another 10 min
3. Add diced Tomatoes, chipotle peppers & tomato sauce
Note: fill up the empty cans of tomatoe residue with water & make a “watered down can” combine it into 1 can only.
4. Add sweet potatoes
Note: cook them for about 30 Minutes in a separate pot of water. Strain them, then add to
chili.
Cook for about an hour.
Add beans the last 30 minutes.
Serve by itself or over rice with cheese , sour cream. Etc.
