Black Bean Burgers

Black Bean Burgers

Ingredients:

Makes about 7 smaller size burgers

1 can black beans (14-15 oz)

1/2-1 Tbsp olive oil

2/3 cup finely chopped pepper

1/8-1/4 cup finely chopped yellow onion

3 cloves garlic or 1 1/2 tsp minced garlic

3/4 tsp ground cumin

1/2 tsp chili powder

1/4 tsp garlic powder

1/8 tsp smoked paprika

1/4 cup bread crumbs or oat flour

1/3 cup mashed sweet potato

1 Tbsp BBQ sauce

1 Tbsp Mustard

1 Tbsp Ketchup

Pinch salt & pepper

Preheat oven to 325

Spread beans on a lined baking sheet & bake for 15 mins until slightly dried out.

Sauté oil, pepper, onion, garlic over medium heat until onion is soft. (About 5-6 mins)

Place in a bowl and gently blot out moisture. Add cumin, chili powder, garlic powder, smoked paprika, bread crumbs, mashed sweet potato, BBQ sauce, mustard, ketchup, salt & pepper.

Mix well

Add black beans & smash some beans with a form and mix well.

Form patties using approximately 1/3 cup.

Place on lined baking sheet.

Cook for 10 mins on each side at 375.
