Best Homemade Potato Soup

Ingredients:
- 1 small head of cauliflower, cut into florets
- 1 medium turnip, peeled and diced (optional for extra texture)
- 4 slices bacon, chopped
- 3 tbsp butter
- 3 cloves garlic, minced
- ½ small onion, diced
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- ¼ cup cream cheese
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 tbsp chopped green onions (for garnish)
Instructions:
- Cook the Bacon: In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon grease in the pot.
- Sauté the Aromatics: Add butter, onion, and garlic to the pot. Sauté until soft and fragrant.
- Simmer the Veggies: Add cauliflower and turnip to the pot. Pour in the broth and bring to a boil. Reduce heat and let simmer for 15-20 minutes until the veggies are soft.
- Blend Until Creamy: Use an immersion blender to puree the soup until smooth. (Or transfer to a blender in batches.)
- Add Cream & Cheese: Stir in the heavy cream, cream cheese, shredded cheddar, smoked paprika, garlic powder, salt, and pepper. Let it simmer for another 5 minutes until creamy.
- Serve & Garnish: Ladle into bowls and top with crispy bacon, chopped green onions, and extra shredded cheese if desired.
