🥗 Best Chicken Salad with Almonds

Ingredients:

  • 2 cups cooked shredded chicken
  • ½ cup diced celery
  • 1 cup red grapes, halved
  • ½ cup sliced or slivered almonds, toasted
  • ½ cup mayonnaise (or Greek yogurt for lighter)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper, to taste
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. In a large bowl, combine shredded chicken, celery, grapes, and toasted almonds.
  2. In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss gently until everything is coated evenly.
  4. Taste and adjust seasoning if needed.
  5. Chill in the fridge for at least 30 minutes to let flavors meld.
  6. Serve on a bed of greens, in a sandwich, or with crackers.

Tips:

  • Toast almonds in a dry skillet over medium heat for 3-5 minutes, stirring constantly until fragrant and golden.
  • Add a handful of chopped apples or dried cranberries for extra sweetness.
  • Use rotisserie chicken for quick prep.
