Ingredients
- 1 lb beef liver
- ¼ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp garlic powder (optional)
- 1 large onion, sliced
- 2 tbsp oil or butter (divided)
- ½ cup milk (for soaking – important!)
Instructions
1. Prep the Liver (Don’t Skip This!)
- Rinse liver and remove any visible membrane.
- Slice into ½-inch pieces.
- Soak in milk for 30–60 minutes in the fridge.
- This removes bitterness and softens texture.
- Drain and pat completely dry.
2. Season & Coat
- In a bowl, mix:
- Flour
- Salt
- Pepper
- Paprika
- Garlic powder
- Lightly dredge liver slices in flour mixture.
- Shake off excess (don’t overcoat).
3. Cook the Onions
- Toss sliced onions with 1 tbsp oil or butter.
- Air fry at 380°F (193°C) for 8–10 minutes, shaking once.
- Remove and set aside.
4. Air Fry the Liver
- Preheat air fryer to 380°F (193°C).
- Lightly spray basket with oil.
- Place liver slices in a single layer.
- Spray tops lightly with oil.
- Air fry for 6–8 minutes total, flipping halfway.
⚠️ Do not overcook — liver should be just cooked through and tender.
5. Combine
- Add onions back on top of the liver.
- Air fry together 2 more minutes to warm through.
Serve Immediately
- Great with mashed potatoes, gravy, or fried potatoes
- Best eaten hot and fresh 😋
