BBQ Chicken and Smoked Sausage Skillet
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 smoked sausages, sliced
- 1 small onion, chopped
- 1 bell pepper (any color), chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1/2 cup sugar-free BBQ sauce
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prep the Ingredients:
- Cut the chicken into bite-sized pieces.
- Slice the smoked sausages.
- Chop the onion, bell pepper, and zucchini.
- Halve the cherry tomatoes.
- Prepare the broccoli florets.
- Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken pieces, season with salt, pepper, garlic powder, and smoked paprika.
- Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Remove the chicken from the skillet and set aside.
- Cook the Sausages and Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the sliced smoked sausages and cook until browned, about 4-5 minutes.
- Add the chopped onion, bell pepper, zucchini, and broccoli. Cook until the vegetables are tender, about 5-7 minutes.
- Combine and Add BBQ Sauce:
- Return the cooked chicken to the skillet.
- Add the cherry tomatoes and sugar-free BBQ sauce. Stir to combine and heat through, about 3-4 minutes.
- Serve:
- Garnish with chopped fresh parsley.
