Banana Oatmeal Muffins (Weight Watchers-Friendly)

Ingredients:

  • 2 ripe bananas (mashed)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk (or any milk of choice)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • Pinch of salt
  • Optional: 1/4 cup walnuts or chocolate chips (for extra flavor, optional for higher points)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the oats, applesauce, almond milk, vanilla extract, cinnamon, baking soda, baking powder, and salt to the bowl. Stir until well combined.
  4. If desired, fold in walnuts or chocolate chips for added texture and flavor.
  5. Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool for a few minutes before serving.
