Ingredients
½ big Ripe banana
4 tbsp all-purpose flour
⅛ tsp baking soda
⅛ tsp salt
½ tsp brown sugar
2 tbsp milk You can use any type of milk you want
1 tbsp vegetable oil
1/8 all spice
4 pieces walnuts optional
Instructions
To a mug, add one small banana or half of a big one and mash until almost smooth. To the same mug, add milk, vegetable oil and mix to combine. Then add brown sugar, mix to combine.

To the wet ingredients, add 4 tablespoons plain flour, salt, baking soda, mixed spice and mix gently until fully combined. Lastly, crumble some walnuts and gently fold into the mix.

Microwave between 1 to 2 minutes or until the cake is no longer wet
Notes
Check that your mug is microwavable before using it.
Remember, not all microwave and mugs are made the same. If after microwaving for 45 seconds and it is still wet, microwave for another 30 seconds or until the cake is well done.
If you are not ready to eat your banana cake immediately, you can make the batter ahead and store in the fridge for up to 24 hours. Give it one quick stir on the day of use and pop in the microwave to cook.
To make a chocolate banana mug cake, add ½ tablespoon of unsweetened cocoa to this recipe and you are good to go. You can also add a few choc chips too. Add 1 tbsp of peanut butter for a nutty flavour.
