Baked Strawberry Cottage Cheese Breakfast Bowls – Fruity, Creamy & High-Protein

Ingredients

Here’s everything you’ll need to make these creamy, fruity breakfast bowls:

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or rolled oats for a heartier texture)
  • 1 tsp vanilla extract
  • 2–3 tbsp honey or maple syrup (optional, for added sweetness)
  • ½ tsp baking powder
  • Pinch of salt
  • 1 cup chopped strawberries (fresh or frozen)

Step-by-Step Directions

1. Preheat & Prep

Preheat your oven to 350°F (175°C). Lightly grease 2–3 small oven-safe bowls or ramekins. This prevents sticking and makes cleanup easier.

2. Mix the Base

In a medium mixing bowl, whisk together cottage cheese, eggs, vanilla, and honey or maple syrup (if using). The mixture should be smooth and creamy. Add almond flour (or oats), baking powder, and salt. Stir until fully combined.

💡 Tip: If you prefer a smoother texture, blend the cottage cheese and eggs in a food processor before mixing in the dry ingredients.

3. Add the Strawberries

Fold in chopped strawberries gently, reserving a few pieces to sprinkle on top for that bakery-style look.

4. Bake

Divide the batter evenly among the prepared bowls. Top with the remaining strawberries. Bake for 25–30 minutes, or until set and lightly golden.

5. Cool & Serve

Let the bowls cool for a few minutes before digging in. They can be enjoyed warm, straight from the oven, or chilled later for a refreshing, creamy breakfast.
