Baked Cottage Cheese Eggs:

ngredients:

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped bell peppers (any color)
  • 1/4 cup chopped spinach (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon butter or cooking spray

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a baking dish or individual ramekins with butter or cooking spray.
  2. In a medium bowl, whisk the eggs until well beaten.
  3. Add the cottage cheese, shredded cheddar cheese, green onions, bell peppers, spinach (if using), salt, pepper, garlic powder, and onion powder to the eggs. Mix until all ingredients are well combined.
  4. Pour the egg mixture into the prepared baking dish or divide evenly among the ramekins.
  5. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and lightly golden on top.
  6. Remove from the oven and let cool slightly before serving.
