Ingredients:
- 3 large eggs
- ½ cup cottage cheese (full fat or low fat)
- Salt and pepper to taste
- ¼ tsp garlic powder (optional)
- ¼ tsp chili flakes or paprika (optional)
- 1 tbsp chopped fresh herbs (like parsley or chives – optional)
- A little butter or oil for greasing
Optional Add-ins:
- Chopped spinach
- Bell peppers
- Grated cheese on top
- Cooked chicken or turkey bits
Instructions:
- Preheat your oven to 180°C (350°F).
- Grease a small baking dish or ramekins with butter or oil.
- In a bowl, whisk together eggs, cottage cheese, salt, pepper, and any optional spices/herbs.
- Pour the mixture into the baking dish.
- Bake for 20–25 minutes or until the eggs are set and lightly golden on top.
- Let cool slightly and serve warm.
