🧾 Ingredients
- 2 cups low-fat cottage cheese
(blend smooth for best texture) - 4 large eggs
- ½ cup vanilla or unflavored protein powder
(whey or whey/casein blend works best) - 1 cup fresh or frozen blueberries
- ½ cup rolled oats (optional but recommended for texture)
- 2 tbsp maple syrup or honey (or zero-calorie sweetener)
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp cinnamon
- Pinch of salt
🥣 Instructions
1️⃣ Prep
- Preheat oven to 375°F (190°C).
- Lightly grease 4 oven-safe bowls or ramekins
(or one 8×8 baking dish).
2️⃣ Blend the Base
- In a blender or food processor, add:
- cottage cheese
- eggs
- protein powder
- sweetener
- vanilla
- baking powder
- cinnamon
- salt
- Blend until smooth and creamy.
3️⃣ Assemble
- Stir in oats (if using).
- Gently fold in blueberries.
- Divide evenly between bowls.
4️⃣ Bake
- Bake 30–35 minutes, until:
- centers are set
- tops are lightly golden
- a toothpick comes out mostly clean
5️⃣ Cool & Enjoy
- Cool 5–10 minutes before eating.
- Serve warm or cold.
