Bacon/Avocado/Cheese Stuffed Mushrooms

Ingredients:
6 Portobello Mushroom Caps
1 8oz Package of Cream Cheese
3 avocados
1lb. Bacon
1 cup shredded cheddar cheese
Dash of black pepper
Directions:
1. Preheat oven 350 degrees
2. Fry the bacon in a pan on stove. Place on paper towel to soak up excess grease.
3. Wash the mushrooms and pat them dry.
4. Remove the stem and dark gills from the mushrooms.
5. Remove Avocado from skin and put in bowl, add the cream cheese and cheddar cheese and mix together.
6. Take 3/4 of the bacon, break apart and fold into bowl with cheeses and Avocado. Add some black pepper.
7. Sprinkle olive oil on bottom of dish. Stuff the mushrooms with mixture and place in dish.
8. Sprinkle cheddar cheese on top and add bacon.
9. Bake in oven for about 20-30 minutes. Remove, let sit for a few minutes.
** These are yummy on the grill as well. I like to wrap them in foil, once cooked, take out, put on tray to brown up for a couple minutes.
