AVOCADO GARLICKY MUSHROOM TOAST!

Ingredients:

For the mushrooms:

  • About 250/300g of chestnut mushrooms
  • 1 clove of garlic, crushed
  • 1 tablespoon of olive oil
  • A generous splash of reduced-sodium soy sauce
  • 2 tablespoons of fresh thyme leaves
  • A sprinkle of black pepper

For the avocado:

  • 1 ripe avocado
  • The juice of 1/2 lemon
  • A pinch of sea salt or pink Himalayan salt

2 slices of light whole-grain bread (or a low SmartPoints value bread of your choice)

Instructions:

  1. Start by cooking the mushrooms. Wash them and slice them. Heat up the olive oil in a non-stick frying pan. Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning. Add the sliced mushrooms and the reduced-sodium soy sauce. Cook for about 8-10 minutes until all the moisture from the mushrooms has evaporated. Add the fresh thyme and black pepper.
  2. To prepare the avocado, simply mash it with a fork and add the lemon juice and a pinch of salt.
  3. Toast the bread slices, spread a thick layer of the avocado on top, and then add the cooked mushrooms.😊
