American Goulash (Ground Beef)

Ingredients:

  • 1 pound ground beef (preferably lean)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large green bell pepper, diced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 cups elbow macaroni, uncooked
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add chopped onions and minced garlic to the skillet. Cook until the onions are translucent.
  3. Stir in the diced green bell pepper and cook for an additional 2-3 minutes.
  4. Add crushed tomatoes, tomato sauce, uncooked elbow macaroni, beef broth, oregano, basil, smoked paprika, garlic powder, onion powder, salt, and pepper to the skillet. Mix well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the macaroni is tender, stirring occasionally.
  6. If the mixture becomes too thick, you can add a bit more beef broth or water.
  7. Once the macaroni is cooked, taste and adjust the seasonings if necessary.
  8. If desired, top each serving with shredded cheddar cheese and let it melt.
  9. Garnish with chopped fresh parsley and serve hot.
