🛒 Ingredients

  • 1½ cups unsweetened shredded coconut
  • ½ cup almond flour

  • ¼ cup powdered erythritol or monk fruit sweetener
  • 1 large egg

👩‍🍳 Instructions

  1. Preheat oven to 175°C (350°F) and line a baking tray.
  2. In a bowl, mix coconut, almond flour, chopped almonds, and salt.
  3. In another bowl, whisk egg, melted coconut oil, vanilla, and sweetener.
  4. Combine wet and dry ingredients, then fold in chocolate chips.
  5. Scoop small cookie mounds onto tray and gently flatten.
  6. Bake for 10–12 minutes until edges are golden.
  7. Cool completely—they firm up as they set.
